About

Big Spring Cafe has been feeding Huntsville since 1922, which makes it one of the oldest continuously operating restaurants in the city and, by its own description, the oldest operating cafe in Huntsville. Troy Baucom founded the cafe, and ownership passed through a short line of local hands over the following decades: Hazel Beene bought it in 1946, Doris and Howard Cowley took over in 1972, and Pam Milam, the current owner, bought the business from the Cowleys in 1992. That continuity of local ownership, generation after generation, is rare for a restaurant that has now been open for more than a century.

The cafe relocated in April 2017 to a newly constructed building about half a mile west of its original spot on Governors Drive, a move that let Milam modernize the kitchen and dining room while keeping the menu and the name intact. Regulars who had eaten at the old location for decades made the short move with the restaurant, and the new building has since become its own fixture on Governors Drive.

Big Spring Cafe calls itself the home of the greasy burger, a tagline that says plenty about the kitchen’s priorities. The menu centers on hamburgers and hot dogs cooked the old fashioned way, alongside a no bean chili that has its own following among regulars. Southern specialties round out the rest of the menu, including Brunswick stew, slaw dogs piled with coleslaw, and fried bologna biscuits, the kind of dish that shows up on breakfast counters across North Alabama but rarely gets this kind of dedicated attention.

Breakfast and lunch make up the entire schedule at Big Spring Cafe, which opens early and closes by mid afternoon Monday through Friday and stays closed on weekends. That schedule reflects an older style of neighborhood cafe, built around the working lunch crowd and early risers rather than a dinner service, and it has stayed that way through five ownership changes and one relocation.

What makes Big Spring Cafe worth a special mention in Huntsville’s Southern food scene is not just the age of the business but the fact that it has stayed independently and locally owned through all of it. No franchise agreement sits behind the counter, and no corporate menu has been layered onto what Troy Baucom started back in 1922. Each owner along the way, Hazel Beene, the Cowleys, and now Pam Milam, kept the cafe’s identity as a straightforward burger and Southern food counter rather than reinventing it into something else.

For a restaurant that has operated for more than a century, Big Spring Cafe has managed to avoid becoming a museum piece. The 2017 rebuild gave the kitchen modern equipment and a cleaner dining room without changing what comes out on the plate, and longtime regulars still order the same greasy burger and no bean chili that drew customers to the original Governors Drive location decades ago. That balance of continuity and quiet modernization is part of why the cafe has outlasted so many other Huntsville restaurants that opened and closed in the meantime.

Anyone curious about Huntsville’s restaurant history has reason to stop by Big Spring Cafe, since few businesses in the city can claim a full century of continuous, locally owned operation. It remains a working neighborhood cafe first and a piece of history second, which is likely exactly how its long line of owners intended it to stay. Longtime staff members have stayed with the cafe across the ownership changes, which has helped keep the kitchen’s technique consistent even as the building and equipment around it have been updated. That kind of institutional memory is hard to find in a restaurant industry where turnover is the norm, and it is part of why regulars trust that a burger ordered today will taste the same as one ordered a decade ago.
