About

Alabaster’s Weatherly Plaza is best known for everyday errands, but tucked into it is The Wine Bunker, a whiskey, wine, and tapas bar that has quickly become one of the more distinctive date-night spots in Shelby County. Billed on its own site as a bar built around “integrity and camaraderie,” the space was founded by Chris and Dave, two owners who drew directly on their military backgrounds when shaping the concept, and it shows in a room designed for lingering rather than rushing through a drink.

The military framing isn’t just marketing copy pasted onto a wine list. Sections of the bar’s own site are organized around themes like “Service & Sacrifice” and “Valor in each pour,” and the founders describe camaraderie and community as the centerpiece of the atmosphere they were trying to build. The result is a bar that feels less like a wine bar chasing a trend and more like a personal project two friends built for their own community to enjoy.

The food menu runs small plates and charcuterie rather than a full kitchen, which suits the bar’s purpose well. Bunker Jelly, a creamy house cheese spread paired with spicy jalapeno pepper jelly and served with artisan crackers, is one of the signature starters at $12, alongside a $10 Bread & Oil plate of toasted baguette with an herb and olive oil blend, a $14 burrata salad with heirloom tomatoes and balsamic, a $13 bruschetta topped with Manchego cheese, and a $12 caprese skewer plate of cherry tomatoes, mozzarella, and basil finished with balsamic glaze. The Bunker Board, priced at $47, lets guests build a charcuterie spread by choosing two meats and two cheeses from options like salame, prosciutto, sopressata, chorizo, and spicy coppa, paired with feta, gouda, cheddar, Manchego, gorgonzola, or gruyere, each available individually by the piece for $7 to $9. Four flatbreads round out the food side of the menu, all priced at $13: the Quattro Formagi, the Spanaird, the Italian, and a Greek version topped with olives, artichokes, and feta.

On the drink side, the wine list spans reds, whites, rosé, sparkling, and port by the glass or bottle, running roughly $9 to $23 a glass and $32 to $86 a bottle, from an approachable pinot grigio to a Champagne G.H. Mumm for guests looking to splurge. The cocktail menu leans bourbon and whiskey forward, true to the bar’s name, and every cocktail on the list is priced at $13, including a Smokey Ol’ Fashioned built on Bulleit bourbon, a Kentucky Mule made with Maker’s Mark, a Blackberry Smash, an Aperol Spritz, a French Bunker, a Sidecar, and a Sazerac finished with an absinthe rinse. A Bunker Espresso Martini, made with Four Roses bourbon, espresso, and maple syrup, gives coffee drinkers a reason to stick around after dinner.

The Wine Bunker also runs a Coffee Canteen out of the same address in the mornings, serving coffee from 6:30 to 10:30 a.m. Monday through Saturday before the bar switches over to its evening wine and whiskey service in the afternoon. The bar itself opens most days around 3 p.m. and runs until 11 p.m., though Mondays and Tuesdays are typically reserved for private events, so it’s worth checking ahead if a weekday visit is the plan. The calendar beyond a standard night of drinks includes wine pairing dinners, such as a Power of Place Wine Dinner hosted by Chef Lindsey at $75 per person, along with recurring live music nights that have featured acts like Alec Deason and Magic City Mojo. Guests can also sign up for the bar’s “Take Cover” email list to get advance notice of upcoming dinners and shows.
